Ingredients

  • ½ lb spaghetti
  • 1 large egg
  • 2 large egg yolks
  • 2 cups grated Pecorino-Romano cheese
  • 1 tablespoon olive oil
  • 1 cup chorizo, diced
  • 3 garlic cloves, minced
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • chopped parsley, for garnish
  • salt, to taste

Preparation

  1. Bring a large pot of salted water to boil and add spaghetti and cook until al dente according to package directions. Before draining, reserve some of the pasta water.
  2. In a bowl, mix together the whole egg, egg yolks, pecorino and black pepper until evenly combined. Set aside.
  3. Heat olive oil in a large non-stick skillet over medium-high heat. Add chorizo and garlic and cook for 3 minutes, until the chorizo begins to get crispy.
  4. Turn off the heat then add cooked spaghetti, a ladle of pasta water, the pecorino and egg mixture, and the smoked paprika. Use tongs to toss until evenly combined and the pasta is creamy.
  5. Plate it up and garnish with more pecorino and chopped parsley.
