- 1 lb green beans, washed and trimmed to 3" pieces
- 50 garlic cloves, finely minced
- 1 teaspoon kosher salt
- ¼ teaspoon white pepper
- ¼ teaspoon msg, or chicken bouillon powder

Preparation
- Using a chef's knife, finely mince 50 cloves of garlic and set aside.
- Add 2 inches of neutral oil to a shallow pan and heat to 375°F.
- Fry the green beans in batches for about 1 minute, or until the skins start to blister.
- Once fried, immediately transfer the beans to a paper towel-lined plate. Continue frying all the beans, and once done, reserve ¼ cup of the frying oil.
- In a large pan, add the reserved ¼ cup of frying oil. Add the garlic and sauté on low for 1-2 minutes, until the garlic is pale golden and aromatic but not browned.
- Add the green beans back to the pan and season with white pepper, MSG (if using), and salt to taste.
