Ingredients

for 4 servings

  • 1 lb green beans, washed and trimmed to 3" pieces
  • 50 garlic cloves, finely minced
  • 1 teaspoon kosher salt
  • ¼ teaspoon white pepper
  • ¼ teaspoon msg, or chicken bouillon powder

Preparation

  1. Using a chef's knife, finely mince 50 cloves of garlic and set aside.
  2. Add 2 inches of neutral oil to a shallow pan and heat to 375°F.
  3. Fry the green beans in batches for about 1 minute, or until the skins start to blister.
  4. Once fried, immediately transfer the beans to a paper towel-lined plate. Continue frying all the beans, and once done, reserve ¼ cup of the frying oil.
  5. In a large pan, add the reserved ¼ cup of frying oil. Add the garlic and sauté on low for 1-2 minutes, until the garlic is pale golden and aromatic but not browned.
  6. Add the green beans back to the pan and season with white pepper, MSG (if using), and salt to taste.
