Ingredients
for 1 cup
- ¼ cup water
- 1 cup granulated sugar
- ½ cup peach nectar
- 6 tablespoons unsalted butter, cold
- 1 teaspoon kosher salt
Preparation
- In a heavy-duty saucepan over medium heat, combine water and sugar until it resembles wet sand.
- Cook without mixing the sugar mixture for about 10 minutes or until it turns golden brown.
- Remove from the heat and slowly whisk in the peach nectar until thoroughly combined.
- Return to medium heat then whisk in the butter, one tablespoon at a time until evenly incorporated. Stir in the salt and continue cooking until the caramel thickens and reaches 235°F (113°C), about 2 minutes.
- Remove caramel from the heat and allow it to slightly cool down before using. The caramel will thicken as it cools.
- Drizzle caramel over your favorite vanilla ice cream.
