Ingredients

Wings:

  • 1.5 lb chicken wings
  • 2 tablespoons cornstarch
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon freshly ground black pepper

Mango-Chili Sauce:

  • 2 large mangoes, peeled, pitted, and coarsely chopped
  • 10 red thai chiles
  • ½ cup water
  • 2 garlic cloves
  • 4 tablespoons honey
  • ½ teaspoon kosher salt
  • 2 tablespoons unsalted butter, cold
  • scallion, sliced, for garnish
  • red thai chile, minced, for garnish
  • fresh lime juice, for garnish

Preparation

  1. Prepare the wings: Pat the chicken wings using a paper towel to remove excess moisture.
  2. In a medium bowl, mix together cornstarch, salt, baking powder, garlic powder, onion powder, paprika, and pepper until well combined. Add the chicken wings and toss until evenly coated. Set aside.
  3. Make the sauce: In a medium pot, combine the mango, chilies, water, garlic, honey and salt. Use an immersion blender to blend until smooth. Place the pot over medium heat and cook for 5 minutes. Whisk in the butter and continue cooking until the sauce is thickened, about 2 to 3 minutes. Set aside.
  4. Preheat an air fryer to 400°F (200°C) for 5 minutes.
  5. In the air fryer basket, arrange the chicken wings in a single layer.
  6. Air fry the chicken wings for 10 minutes. Flip the chicken wings and continue air frying for 8 minutes, or until the skin is golden brown and crispy.
  7. Transfer the cooked wings to a bowl and toss with mango sauce.
  8. Add to a serving plate and garnish with scallions, fresh chiles and a squeeze of lime juice.
