Wings:
- 1.5 lb chicken wings
- 2 tablespoons cornstarch
- 1 teaspoon kosher salt
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon freshly ground black pepper
Mango-Chili Sauce:
- 2 large mangoes, peeled, pitted, and coarsely chopped
- 10 red thai chiles
- ½ cup water
- 2 garlic cloves
- 4 tablespoons honey
- ½ teaspoon kosher salt
- 2 tablespoons unsalted butter, cold
- scallion, sliced, for garnish
- red thai chile, minced, for garnish
- fresh lime juice, for garnish

Preparation
- Prepare the wings: Pat the chicken wings using a paper towel to remove excess moisture.
- In a medium bowl, mix together cornstarch, salt, baking powder, garlic powder, onion powder, paprika, and pepper until well combined. Add the chicken wings and toss until evenly coated. Set aside.
- Make the sauce: In a medium pot, combine the mango, chilies, water, garlic, honey and salt. Use an immersion blender to blend until smooth. Place the pot over medium heat and cook for 5 minutes. Whisk in the butter and continue cooking until the sauce is thickened, about 2 to 3 minutes. Set aside.
- Preheat an air fryer to 400°F (200°C) for 5 minutes.
- In the air fryer basket, arrange the chicken wings in a single layer.
- Air fry the chicken wings for 10 minutes. Flip the chicken wings and continue air frying for 8 minutes, or until the skin is golden brown and crispy.
- Transfer the cooked wings to a bowl and toss with mango sauce.
- Add to a serving plate and garnish with scallions, fresh chiles and a squeeze of lime juice.
